A traditional chef’s hat is said to have 100 pleats which is representative of the 100 ways that a chef knows how to cook eggs. Even as a chef, I can honestly say that I do not know 100 ways to cook eggs but I sure as hell know how to cook a great egg for any occasion.
Eggs have fascinated me ever since my college days when I used to buy a batch of 60 Norco Ranch eggs and then spend the day finding great ways to cook them. If you want to cook beautiful eggs for your friends and family, here are some of the ways in which you can do it.
Eggs in the Clouds
To really show off your skills, why not try cooking these eggs in the clouds for you friends and family. Start by separating the yolk from the egg white and put the yolks to one side, after this you will need to whisk the whites until they form soft peaks, an automatic whisker is required here. Place the whites on a lined baking tray and then place in a pre-heated oven for around 7 minutes. Take the whites out of the oven, they should have started to rise by now, and then add the yolk in to the centre of the whites, cook for 5 more minutes and you will have some beautiful and fluffy eggs in the clouds.
Poached Eggs
Many people try and fail to cook the perfect poached egg and here is the best way in which you can get this type of egg just right. Using a deep pan, fill it with water and bring it to the boil, once boiling, you should use a utensil to stir the water gently until it is slowly spinning. Break your egg into the centre of the swirling water and remove it from the heat, leave it for 3-4 minutes, remove the egg and quickly plunge it into an ice bath. The ice bath firms the outside of the egg but leaves the middle of it runny, perfect for a soft English muffin.
Scrambled Eggs
Scrambled eggs should be soft and juicy in flavour, not dry and most definitely not in one million small pieces. In order to cook the perfect scrambled egg, you should be constantly moving the eggs whilst they are in the pan and alternate between having them on the heat and then off again. As you cook your eggs you should add a small amount of milk, and a touch of creme fraiche in order to give your eggs that lovely creamy texture that we are after. Make sure that you have plenty of oil in your pan before starting and whatever you do, don’t forget to keep moving the eggs around the pan as they cook.
